Home-made Tortelli Cooking Class

Overview

In the region of Emilia-Romagna, rezdoras are esteemed elderly women responsible for safeguarding the confidential recipes of traditional cuisine with great diligence.

Tortelli represents the quintessential dish of Reggio Emilia, designed for communal enjoyment with friends and family throughout the year.

Participants will progress through the various stages by commencing with an aperitivo of Lambrusco wine and a portion of “erbazzone”, a savoury cake featuring Parmigiano and spinach.

Throughout a 3-hour culinary workshop, participants will be instructed on the meticulous preparation of dough from scratch, utilising organic produce from local farmers. Additionally, the session will encompass the creation of the filling, the process of dough stretching, and the mastery of the art of folding. Subsequently, the workshop will culminate with a collective tasting of the Tortelli, fostering an ambience reminiscent of an authentic Italian family gathering.
